PetsApp Community Bake-Along - with Rosie Brandreth-Poynter

Join Bake-Off's Rosie Brandreth-Poynter and the PetsApp pack as we while away the Sunday hours baking up a storm. Family-friendly; time to get stuck in!

Join us on January 31st at 2pm as we bake up one of Rosie's delicious recipes - this time, we'll be making Chocolate Mousse ‘Mud’ with Piggy Meringues.

Here's a list of things you'll need in the house to get started:

Equipment:

  • Mixing bowls
  • Whisk x 2 (ideally a stand mixer or electric hand whisk)
  • Flat baking tray lined with baking paper (ideally textured)
  • Measuring spoons
  • Piping bags
  • Small jars/pots or one bigger bowl (to put the mousses in)

Ingredients:

for the chocolate mousse:

  • 200g dark chocolate
  • 120g egg whites (or 120g aquafaba if making vegan)
  • 2 tbsp caster sugar
  • Good pinch of salt
  • 200g double (or 200g double plant cream if making vegan
  • ¼ tsp peppermint extract or orange extract (optional)
  • To decorate – gold food spray and fresh mint leaves (optional)

For the meringues:

  • 3 medium egg whites (or 90g if using pasteurised pre-separated whites)
  • 150g caster sugar
  • Pink food colour gel
  • Edible ink pen (black)

A 2015 Cambridge vet graduate, Rosie was a semi-finalist on the Great British Bake Off 2019, best known for producing her animal-themed bakes including biscuit chicken! She returned to the Bake Off tent to win the Great Christmas Bake Off in 2020.

Living in Oxfordshire with a menagerie of animals, Rosie works as an emergency and critical care small animal (night) vet, after five years of mostly equine practice.

Since the Bake Off, Rosie has been developing recipes for various brands and magazines, chatting on BBC radio, running online baking classes and enjoying charity work, alongside her veterinary career.
